Big thanks to Portland, Oregon-based www.thebakingbird.com for creating this gorgeous cake that speaks straight to my lemon-shaped heart. In the last few years, friends have introduced me to the magic of St. Germain, an elderflower liqueur. So, pow, double-whammy.
This cake looks so divine that I am sending you straight to the source without having tested it myself yet. When I do, I’ll substitute the soy milk and vinegar with buttermilk, and give you a tablespoon count for the lemon juice. Lemon size and juiciness varies widely, and I don’t want to lead you astray with the ratio of liquid to dry ingredients.

Travel Tip: Whenever you’re in San Antonio, TX, go to Ocho in Hotel Havana, sit in their opulent l’orangerie-style dining room, and order a Montserrat, which features St. Germain. I meet up with artist friends here every April to cap off their showing at Fiesta Arts Fair.
